Happy Birthday Ed!


September 3rd was Eddie's 26th birthday and I can't believe I've been celebrating his birthdays with him since he was 18! Everyone knows Eddie and I love to cook, but most importantly we LOVE to cook Italian food... duh! Eddie's favorite dish is lasagna so I decided to make him lasagna from scratch and have a romantic home cooked dinner. I make my sauce from scratch; which takes about 6 hours so I got up early and started my sauce...
The Outcome:


Lasagna Directions:
1 Package of Lasagna Noodles
1/2 lb. Ground Sausage (sweet or hot)
1/2 lb. Ground Beef
3 Jars of Sauce (I use my own sauce so I use more)
1 lb. Ricotta Cheese
2 Eggs
Salt and Pepper
Shredded Mozzarella (fresh not bagged)
Shredded Parmesan (fresh not bagged)

Cook Lasagna noodles as directed on box, strain, run under cold water, then place them flat on wax paper. Mix sausage and beef in pan to brown. Mix Ricotta cheese with 2 eggs, 3 tbsp Parmesan cheese and salt and pepper (set aside). Heat sauce.

When everything is ready use a 9x13 baking dish. Start by putting the layers in the pan (you will usually get three layers). Put sauce on the bottom then continue with noodles, Ricotta cheese mixture, sprinkle Mozzarella and Parmesan cheese, then sprinkle meat. Continue with each layer - finish with noodles and sauce on top and sprinkle top with Mozzarella and Parmesan cheese. Cover with foil and bake in a 350 degree oven for 40-45 minutes. Let sit for 20 minutes.

Needless to say, the Lasagna was delish and we had an awesome dinner! There's nothing like cooking a meal for your hubby from scratch!
