Weekly Update

The girls woke up early Monday morning so we started our day with cuddles:


Evie fell asleep in the car that afternoon and actually transferred to the couch with ease:



The kids were also off of school on Tuesday for MLK Day and Ev took full advantage of the opportunity to sleep in, while Wes was up and ready to play:



The sun was shining through the windows so I assumed it was a nice day and took the kids to the park. Turns out it was still super cold so we played for a bit before heading back home:











The twins and I went to Downtown Summerlin Wednesday morning to do some shopping and came across the most peaceful little spot. They had fun throwing money, or "honies" as Ev calls it, in the river:






Tenley had a great day at school learning about the letter 'N' and got another picture from her boyfriend:



Wes woke up in an awful mood on Thursday and did NOT want to go to school. Drop-off is a rough time of day for him. He cries and cries about how he doesn't want to go to school (because he wants to stay home with mommy), then the teachers have to take him out of his seat kicking and screaming. They always text me within minutes saying he is just fine, but it still breaks my heart to watch. This time, Miss Marsha sent me a picture saying he "was happy and in active play already":

While the twins were in school, I took Tenley to meet her boyfriend at Fun Lane and she couldn't have been more excited:

The twins did such a good job on their 'N''s at school:


The kids were also learning about reptiles this week. On Friday, Tenley made a turtle whose head went in and out of it's shell. She named her turtle "Shelly", of course:

It's been pretty chilly here recently, but the views of the snowcapped mountains are by far my favorite thing. Definitely makes driving to work bearable:



Ev and Wes developed a cough over the weekend so Ev had to miss her morning dance class and was super bummed. Luckily, it didn't hit Tenley and she was so excited to dance with her friends:




(I can't believe these little besties will perform in their 3rd recital together! They are so big and SO beautiful!)

Last year I cut out most carbs, but went a little rogue over the holidays. I'm trying to get back on track and get even healthier than last year. I made the kids homemade pizza for dinner and although the wheat crust isn't as bad as pizza from a pizza restaurant, I decided to make my pizza on a wheat tortilla and it was surprisingly delicious!! You gotta try it:
(Wheat tortilla with alfredo sauce, broccoli or spinach, turkey bacon, fat-free mozzarella with a pinch of sea salt. I folded them in half and ate them like a taco. SO yummy- I promise!!)


It rained all day Sunday, so we kept it simple and lazy:




I've been wanting to try Pho so badly, but have put if off due to the noodles. Then, I found some millet and brown rice ramen noodles at Costco (still carbs, I know, but better than white noodles...better NOT perfection!) and decided to give it a go! Everything cooked in the crock-pot and turned out pho-mazing and perfect for a rainy day:
