SHOOP BA-DOOP!


This past Saturday we went tailgating for the UNLV vs. New Mexico game. Courtney and Isaac brought Grace and she looked so adorable in her Rebels cheerleading outfit; she must be their good luck charm because we won 45 to 10!

It had been a really long time since I had been tailgating and I honestly forgot how much fun it was. We played my favorite game...flip cup! We played girls vs. guys and let me just say us girls kicked ass! However, if there was a game we lost I did not like it and I would shout (in my loud drunken voice) "ONE MORE TIME" - it was a good time! After the game we went to the Fiesta with some friends to grab a bite to eat and have some more fun!

Kasie and I have been talking about doing karaoke for weeks, so after the game we forced talked some friends into doing karaoke. Kasie decided to put all of the girls names on the karaoke card and not tell us what song we were going to sing. When we were called up to sing she told us we were singing "Shoop" by Salt N Pepa (are you kidding me?!?!?). Although we were horrible, it was awesome! Kasie knew ALL the words while Frannie, Cass, Sav and I just sang the chorus over and over again...

We looked like total idiots, but had a ton of fun doing it!

Like a G6

On my way to work I heard an advertisement for the Mike Posner concert at the House of Blues. I was thinking..."well he's pretty new, I bet the tickets are cheap!" So as soon as I got into my office I went to ticketmaster and sure enough tickets were $32.07 - SCORE! I told Courtney about it and she wasn't too sure about going, but I guess she did some research and found out that the Far Eat Movememt was going to be there as well and was automatically in. Who the heck are they you ask?! Ugh, only a group sings "Like a G6" that Courtney and I are obsessed with! Since I married such a haggler he found a promotional code ane we got our tickets for $12.50 each - DOUBLE SCORE!! Keeping on the "saving money" train we decided to buy a bottle of Patron and drink our own drinks instead of buying shots at Mandalay Bay that cost $15+ each! So everytime we wanted a shot we went to the car, did some shots and instead of limes we sucked on gummy worms - we're so classy!

This night can be summed up in one word: MEMORABLE. Some people may not remember throwing chicken nuggets at homeless people, how much alcohol was actually consumed or who tooted and booted it, BUT it was definitely memorable in many ways!

The Essentials



In Vegas, the summers are ridiculously hot! You can't just go outside and enjoy the day...there must, I mean MUST be a pool (and beer) involved. This summer was full of fun days by the pool, but this day was extremely fun and full of great friends and memories! We sent the boys for a beer run while us girls walked the kids (Gracie and Izzie) through the pool to relax them. Grace loved her toes being in the water and fell right asleep. When the boys got back, Grace chilled in the shade all day while us grown ups played:

Our day consisted of beer, tequila, pizza, wings...you know the essentials! We layed out, swam, danced, attempted to play volleyball, Ed broke Kasie's foot - It was an awesome day and we were all dead tired by 6 o'clock - even Gracie!



Aquaholics

Eddie and I have lived in Las Vegas for almost FIVE YEARS (crazy, right?!) and I have NEVER been to Lake Mead. For those of you who don't know, Lake Mead is a man-made lake that is maintained by the water from the Hoover Dam. Court's parents got a house boat this Summer and we went to check it out for a few hours the day after it arrived. Before going to see the house boat we picked up Court's sister, Allison, and some bread to feed the fish.

I swear we would throw one piece of bread in the water and in minutes there would be tons of fish at the surface of the water searching for bread - it was nuts! The fish were so gross looking! Can you imagine jumping into this:

Now that's what I call a party!

After feeding the fish we made our way to the house boat, The Aquaholic. It was such a beautiful boat and have never seen anything like it before. Although I was blown away by how nice the boat was I was very nervous about Ed being on a boat without a life vest. For almost eight years Ed has told me he can't swim. I have tried to teach him a million several times, but he always seems to sink to the bottom...it's a real problem. On our honeymoon he did really good in the ocean (with a life vest) so it must have given him a confidence boost because he was determined to jump into Lake Mead that day, whether it gave me a heart attack or not! Needless to say...he jumped in, flipped in, dove in, swam around...I mean this kid was freakin' Flipper himself! WTF?! I think he's been lying to me all these years...

Here's the evidence that he's a pro:

We had such a good day at the lake and are very grateful that the Gruber's allowed us to come visit them on The Aquaholic. I'm glad the day brought out my husband's inner Michael Phelps! :)

After our day at the lake we went home and got ready to go Country Fest with our friends. I'm not a real fan of country music, but I'm always down to party with my friends and besides, country folks sure do know how to party!

My brother Kasie's Brother, Randy, came to Country Fest and I was so excited because I love spending time with him - he's hilarious!


Court and I saw these two studs and decided to sneak up on them:

They were selling glow sticks, laser guns and all sorts of crazy things and Court's stepdad went a little crazy with the laser gun while the boys were well...themselves!


The whole day was fun and I can honestly say I am truly blessed with the greatest friends in the world! :)

SHE'S GOT THE LIFE!!

Happy Birthday Ed!


September 3rd was Eddie's 26th birthday and I can't believe I've been celebrating his birthdays with him since he was 18! Everyone knows Eddie and I love to cook, but most importantly we LOVE to cook Italian food... duh! Eddie's favorite dish is lasagna so I decided to make him lasagna from scratch and have a romantic home cooked dinner. I make my sauce from scratch; which takes about 6 hours so I got up early and started my sauce...
The Outcome:


Lasagna Directions:
1 Package of Lasagna Noodles
1/2 lb. Ground Sausage (sweet or hot)
1/2 lb. Ground Beef
3 Jars of Sauce (I use my own sauce so I use more)
1 lb. Ricotta Cheese
2 Eggs
Salt and Pepper
Shredded Mozzarella (fresh not bagged)
Shredded Parmesan (fresh not bagged)

Cook Lasagna noodles as directed on box, strain, run under cold water, then place them flat on wax paper. Mix sausage and beef in pan to brown. Mix Ricotta cheese with 2 eggs, 3 tbsp Parmesan cheese and salt and pepper (set aside). Heat sauce.

When everything is ready use a 9x13 baking dish. Start by putting the layers in the pan (you will usually get three layers). Put sauce on the bottom then continue with noodles, Ricotta cheese mixture, sprinkle Mozzarella and Parmesan cheese, then sprinkle meat. Continue with each layer - finish with noodles and sauce on top and sprinkle top with Mozzarella and Parmesan cheese. Cover with foil and bake in a 350 degree oven for 40-45 minutes. Let sit for 20 minutes.

**Recipe is a modified version of my mother-in-laws recipe.

Needless to say, the Lasagna was delish and we had an awesome dinner! There's nothing like cooking a meal for your hubby from scratch!

I'm a Rebel!



I am officially a UNLV graduate and I must say... 
it feels awesome! 


I am very, very proud of my degree for several reasons: I am the first in my family to get a college degree, I moved across the country to get my college degree, I worked full time  while maintaining good grades, and I planned a wedding during a good portion of it! After graduating, I became very appreciative of those people with degrees because I finally realized all of the hard work that went in to it. To hold a degree you must be a very hard worker and have TONS of determination. I am so proud to be a part of this group!
